Easy Black Bean Soup(Megan)

This is it people, the one meal I constantly get asked the recipe for and my mom friends rave about! It’s super easy, filling, and healthy. And my youngsters love it! You’ll need:   3 cans of black beans with the liquid 16 Oz jar of salsa. We use chunky mild  1/2 cup cilantro  1 Tbsp of minced garlic 2 tsp of gound cumin Add it all to a pot and simmer on low-medium heat, covered, for 20 mins Top with cheddar cheese! We also add chopped onions, avocado and sometimes sour cream. Depending on what we have and what mood were in. This meal is so easy and a go to on the days where you want something real fast and filing. Enjoy! 

Cajun chicken and sausage pasta(Megan)

Super easy recipe for a mom who has limited time or doesn’t want to spend forever cooking!  1 box penne pasta 2 chicken breast  1 package polish kielbasa- or whatever tube like sausage  1 jar Bertoli Alfredo Sauce Tony Chachere’s Creole seasoning Cook the pasta. While it’s cooking cut the chicken into cubes and pan fry with teaspoon butter. Once cooked transfer chicken to a pot. Cut the sausage and sear/pan fry in the same pan as the chicken was previously in, then add it to the pot. Pour the sauce over the chicken and sausage and heat it all together. By then the penne should be done, so drain and add it to the sauce and meat. My kids absolutely love this meal! I add just a little of the creole seasoning to the pot and then add more to mine and my husband’s bowl since my girls don’t like too overly spicy. I also really hate jar Alfredo but again I wouldn’t be a lazy mom trying to make a fast meal if I didn’t use it. 🤷🏼‍♀️

White Chocolate Almond Biscotti (Anne)

Well hello :) Who likes biscotti? How about coffee and biscotti? I LOVE it.  But I don't have a sweet tooth at all or like white chocolate. This should be testament to how delicious these are! I go this amazing recipe from my friend's mother about 2 years ago and have done it many times since. Though she uses 3 tbs of almond extract and I find 2 enough. DELISH You will need: 1/2 cup butter 3/4 cup sugar 2 eggs 1 tsp vanilla 2 Tbsp almond extract 2 cups + 2 Tbsp flour 1 1/2 tsp baking powder 1/4 tsp salt 2/3 cups chopped almonds 2/3 cups white baking chips Preheat over to 325 F Mix butter and sugar. Slowly add eggs and than incorporate remaining ingredients. Pretty much as you would do a cookie! Divide dough two. Shape dough into loaves about 1 to 1 1/2 inch thick, and 3 1/2 to 4 inches wide, tapering the sides. Bake for about 40 minutes - look for golden brown color on top of the loaf with a bit of cracking. Broccoli cheddar soup (Megan)

You’ll need:  2 broccoli heads 4 TBSP butter 1/2 tsp garlic 1/2 cup diced white onion 4 TBSP flour  2 cups half and half  2 cups veggie stock  1/2 cup shredded carrots  2 TSP salt 1TSP pepper 1/4 TSP nutmeg  2 cups cheddar cheese So for this recipe I prefer broccoli heads instead of frozen. It cooks better!  You need to cut the base of the heads and separate, and repeat with the smaller pieces. For example: In the pot melt the butter, then add the garlic and onion and cook for a minute or until you get a slight bubble (low-medium heat) You want to avoid burning the garlic. Add in the flour until it’s well combined.. it’ll be chunky so don’t worry.
